<title>Allez allez, on y va !
      <link>https://www.peren-revues.fr/lexique/2115</link>
This article analyzes the prefabricated lexicon of interactional discourse (PLI) in the field of professional cooking, from which we propose an applied study on the language training of allophone apprentices who follow vocational cooking studies in a French-speaking context. Based on audiovisual data of work and training situations captured in a restaurant kitchen, the study first builds up collections of data corresponding to different professional language acts (sending the plates, warning of one’s passage) that are carried out through the use of a PLI, and then proposes a description following the principles of construction grammar. Drawing on these observations, this study argues for the use of authentic interaction data sets in the foreign language classroom, through which apprentices are guided in observing the PLI linked to the acts identified, in order to foster their linguistic and professional development. </description>
